Ingredients

The bread

  • 3 medium/large very ripe bananas
  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 2 large eggs
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp vanilla extract

Optional additions

  • 1 cup walnuts
  • ½ cup raisins

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. Lightly roast walnuts on a skillet and chop them.
  3. Cream together softened butter and sugar in a mixing bowl.
  4. Mash the bananas and mix them with the eggs into the batter.
  5. Whisk together flour, baking soda, and salt in a separate bowl, then add to the batter.
  6. Stir in vanilla, walnuts, and raisins.
  7. Pour the mixture into the prepared loaf pan and bake for 55-60 minutes.
  8. Let the bread rest for 10 minutes before cooling on a wire rack.
