Smoked St. Louis Style Ribs

Ingredients

The ribs

  • 2 racks St. Louis style ribs
  • 2 tablespoons olive oil
  • 1 cup barbecue sauce

The dry rub

  • 2 tablespoons kosher salt
  • 1 tablespoon cumin
  • 2 teaspoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon brown sugar
  • 1 teaspoon sweet paprika

Instructions

  1. Preheat the smoker to 250 degrees F.
  2. Add wood chips to the smoker tube.
  3. Mix the dry rub ingredients in a small bowl until well blended.
  4. Rub the ribs with olive oil and then apply the dry rub generously on all sides.
  5. Let the ribs marinate for at least 30 minutes if time permits.
  6. Place the ribs bone side down on the smoker rack and cook for 2 hours.
  7. After 2 hours, wrap the ribs in aluminum foil and return them to the smoker.
  8. Cook the wrapped ribs for an additional 2.5 hours until they reach an internal temperature of 200 degrees.
  9. Open the foil, slather the ribs with barbecue sauce, and return them to the smoker for 30 more minutes.
  10. Remove the ribs from the smoker and let them rest for 15-30 minutes before serving.
  11. Cut the ribs into sections and serve with your favorite sides.
