Smoked St. Louis Style Ribs

Instructions
- Preheat the smoker to 250 degrees F.
- Add wood chips to the smoker tube.
- Mix the dry rub ingredients in a small bowl until well blended.
- Rub the ribs with olive oil and then apply the dry rub generously on all sides.
- Let the ribs marinate for at least 30 minutes if time permits.
- Place the ribs bone side down on the smoker rack and cook for 2 hours.
- After 2 hours, wrap the ribs in aluminum foil and return them to the smoker.
- Cook the wrapped ribs for an additional 2.5 hours until they reach an internal temperature of 200 degrees.
- Open the foil, slather the ribs with barbecue sauce, and return them to the smoker for 30 more minutes.
- Remove the ribs from the smoker and let them rest for 15-30 minutes before serving.
- Cut the ribs into sections and serve with your favorite sides.
