Ingredients

The French Toast

  • 7 tablespoons salted butter
  • 6 tablespoons brown sugar
  • 2 teaspoons instant coffee
  • 1 ½ cups canned coconut milk or whole milk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 8-12 pieces croissants
  • to taste fresh berries

Coffee Maple Syrup

  • ¾ cup pure maple syrup
  • 1 tablespoon instant coffee

Coconut Whipped Cream (optional)

  • 1 ounce full-fat coconut milk
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Prepare the coconut whipped cream by flipping the can of coconut milk upside down, opening it, and saving the coconut water.
  2. Scoop the coconut cream into a bowl and whip until soft peaks form, then mix in powdered sugar and vanilla.
  3. For the coffee maple syrup, combine maple syrup and instant coffee in a saucepan, heat until boiling, then simmer for five minutes.
  4. Slice the croissants into strips.
  5. Mix butter, brown sugar, and instant coffee in a bowl.
  6. In a large bowl, whisk together milk, eggs, vanilla, and cinnamon.
  7. Melt some of the butter mixture in a skillet, dip croissant sticks in the egg mixture, and cook in the skillet until caramelized on all sides.
  8. Serve the French toast sticks hot, topped with powdered sugar, coconut whipped cream, berries, and coffee maple syrup.
