Instructions
- Prepare the coconut whipped cream by flipping the can of coconut milk upside down, opening it, and saving the coconut water.
- Scoop the coconut cream into a bowl and whip until soft peaks form, then mix in powdered sugar and vanilla.
- For the coffee maple syrup, combine maple syrup and instant coffee in a saucepan, heat until boiling, then simmer for five minutes.
- Slice the croissants into strips.
- Mix butter, brown sugar, and instant coffee in a bowl.
- In a large bowl, whisk together milk, eggs, vanilla, and cinnamon.
- Melt some of the butter mixture in a skillet, dip croissant sticks in the egg mixture, and cook in the skillet until caramelized on all sides.
- Serve the French toast sticks hot, topped with powdered sugar, coconut whipped cream, berries, and coffee maple syrup.
