Ingredients

The meatballs

  • 2 lbs ground turkey
  • 1 large egg
  • ¼ cup nutritional yeast
  • 1 cup spinach, chopped
  • ½ medium bell pepper, diced
  • ¼ cup fresh parsley, chopped
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ½ tsp ground black pepper

The optional spicy aioli sauce

  • ¾ cup avocado oil
  • 1 large egg
  • ½ tsp mustard powder
  • ¼ tsp sea salt
  • 1 tbsp hot sauce

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Combine all meatball ingredients in a mixing bowl and mix with hands.
  3. Form the mixture into oversized golf ball-sized meatballs and place them on the baking sheet.
  4. Bake the meatballs for 20-25 minutes until fully cooked. Optionally, broil for 2-3 minutes to brown the tops.
  5. While the meatballs are baking, prepare the aioli sauce by blending all sauce ingredients in a jar with an immersion blender until creamy.
  6. Remove the meatballs from the oven and serve with the spicy aioli sauce if desired.
