Ingredients

  • 1 cup all purpose flour
  • ½ cup sugar
  • 2 teaspoons baking soda
  • 1 tablespoon ground cinnamon
  • a pinch sea salt
  • ½ cup dairy-free chocolate chips
  • 3 ripe bananas
  • cup coconut oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • ¼ cup unsweetened almond milk

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper and nonstick spray.
  2. In a medium bowl, mix the flour, sugar, baking soda, cinnamon, and ¼ cup of chocolate chips.
  3. In a food processor, blend the bananas, coconut oil, vanilla, eggs, and almond milk until smooth.
  4. Combine the wet ingredients with the dry ingredients and stir until mixed.
  5. Pour the batter into the loaf pan and sprinkle the remaining chocolate chips on top.
  6. Bake for 50-55 minutes until a toothpick inserted comes out clean.
  7. Cool for about 10 minutes before slicing.
