Summertime Grilled Turkey Sandwiches

Ingredients

The Sandwich

  • ½ lb. freshly cooked and sliced turkey breast
  • 2 oz. freshly grated sharp cheddar
  • 2 large lettuce leaves
  • 2 egg buns
  • 1 Tbsp. butter

The Cream Cheese Mix

  • 1 oz. cream cheese (reduced fat)
  • 2 sun-dried tomatoes chopped
  • 1 shoot green onion (finely chopped)
  • 1 Tbsp. mayo (reduced fat)
  • to taste salt
  • to taste pepper

Instructions

  1. Combine all cream cheese mix ingredients in a small bowl and set aside.
  2. Heat a large grill pan over medium heat.
  3. Slice both egg buns in half and lightly coat all cut-sides with butter.
  4. Grill the buns cut-side down for 1-2 minutes until toasted, then set aside.
  5. Spread the cream cheese mixture onto the cut-side of both top halves of the buns.
  6. Lay one slice of turkey on the grill pan and cook for 10-15 seconds until steaming.
  7. Flip the turkey slice and repeat on the other side, then place it on a bottom bun half.
  8. Top the turkey with shredded cheddar cheese and another slice of turkey.
  9. Add more cheddar if desired and top with a lettuce leaf.
  10. Place the top half of the bun on the lettuce (cream cheese side down) to complete the sandwich.
  11. Repeat the process to make a second sandwich.
