Vanilla Mashed Sweet Potatoes

Ingredients

The sweet potatoes

  • pounds sweet potatoes

The cream mixture

  • ½ cup heavy cream
  • 3 tablespoons heavy cream
  • bean vanilla bean
  • 1 teaspoon grated orange zest (optional)
  • 2 tablespoons unsalted butter
  • to taste kosher salt
  • to taste white pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Bake the sweet potatoes on a baking sheet until tender, about 1 hour.
  3. Let the potatoes cool for 10 to 15 minutes, then peel and discard the skin.
  4. In a pot, heat the cream with the vanilla bean and orange zest until simmering, then remove from heat and discard the vanilla bean.
  5. Combine the potatoes, cream mixture, and butter in a food processor and puree until smooth.
  6. Season with salt and white pepper to taste, and keep warm until ready to serve.
