Instructions
- Preheat the oven to 350°F.
- Bake the sweet potatoes on a baking sheet until tender, about 1 hour.
- Let the potatoes cool for 10 to 15 minutes, then peel and discard the skin.
- In a pot, heat the cream with the vanilla bean and orange zest until simmering, then remove from heat and discard the vanilla bean.
- Combine the potatoes, cream mixture, and butter in a food processor and puree until smooth.
- Season with salt and white pepper to taste, and keep warm until ready to serve.
