Ingredients

The Dressing

  • cup olive oil
  • 3 tablespoons lemon juice
  • ¼–½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup mixed dill, basil, and chives

The Salad

  • ½ lb tender green lettuces
  • 1 cup pea shoots or snap peas
  • 1 cup fennel, thinly shaved or cut
  • 4–6 pieces radishes, thinly sliced
  • 1 piece salad turnip, thinly sliced

Instructions

  1. Prepare the dressing by finely chopping ⅓ of the herbs and whisking them with olive oil, lemon juice, salt, and pepper.
  2. In a bowl, place clean and dry lettuces and greens, then toss with a couple tablespoons of the dressing and a pinch of salt if desired.
  3. Top the greens with pea shoots, fennel, radishes, turnip, and the remaining herbs.
  4. Drizzle with additional dressing and add a grind of pepper. Include any enhancements if desired, and serve immediately.
