The Dressing

The Salad

tender green lettuces

pea shoots or snap peas

fennel, thinly shaved or cut

salad turnip, thinly sliced
Instructions
- Prepare the dressing by finely chopping ⅓ of the herbs and whisking them with olive oil, lemon juice, salt, and pepper.
- In a bowl, place clean and dry lettuces and greens, then toss with a couple tablespoons of the dressing and a pinch of salt if desired.
- Top the greens with pea shoots, fennel, radishes, turnip, and the remaining herbs.
- Drizzle with additional dressing and add a grind of pepper. Include any enhancements if desired, and serve immediately.
