Ingredients

The chicken salad

  • 1 lb cooked chicken
  • ½ cup mayonnaise
  • 2 tbsp curry powder
  • ¼ cup celery, diced
  • ¼ cup red onion, diced
  • ¼ cup dried cranberries
  • ¼ cup almonds, chopped
  • 1 tbsp lemon juice

The sides

  • ¾ box Wheat Thins
  • 2 each Granny Smith Apples

Instructions

  1. In a bowl, combine the cooked chicken, mayonnaise, curry powder, celery, red onion, cranberries, almonds, and lemon juice.
  2. Mix until all ingredients are well combined.
  3. Divide the chicken salad into meal prep containers.
  4. Serve with Wheat Thins and apple slices.
  5. Store in the fridge until ready to eat.
