Ingredients

The hot dogs

  • 1 6 pack Guinness Beer
  • 1 package hot dog buns (organic)
  • 1 package all beef, nitrate free hot dogs (at least 4)
  • 1 red onion thinly sliced
  • 1 package sliced provolone (at least 4 slices)
  • 6 slices crispy bacon, chopped
  • 1 cup potato chips, crushed
  • 1 jar pickled jalapenos

The hot dog sauce

  • ½ cup seed oil free mayo
  • ½ cup dijon mustard
  • ¼ cup Wickles Pickles spicy red sandwich spread
  • 1 tbsp Worcestershire Sauce

Instructions

  1. Braise hot dogs in a pot with three bottles of Guinness, poking holes in them to absorb the beer.
  2. In another pan, caramelize the sliced onions in one bottle of Guinness until fully cooked down.
  3. Grill the braised hot dogs on a preheated grill at 375°F until charred.
  4. Spread the hot dog sauce on the buns, place the hot dogs on top, and cover with provolone cheese.
  5. Toast the buns and melt the cheese on the grill away from direct flame.
  6. Add toppings: Guinness braised onions, pickled jalapenos, bacon, and crushed potato chips.
