Ingredients

The marinade

  • 1 clove garlic, minced
  • 1 tablespoon fresh thyme
  • ½ tablespoon fresh rosemary
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • tablespoons tamari sauce
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • to taste salt
  • to taste pepper

The chicken

  • 5 boneless skinless chicken breasts

Instructions

  1. In a small bowl, whisk together garlic, thyme, rosemary, dijon mustard, honey, tamari, balsamic vinegar, olive oil, salt, and pepper until emulsified.
  2. Place chicken breasts in a large ziplock bag and pour the marinade over them, removing as much air as possible.
  3. Allow chicken to marinate for at least 30 minutes, preferably 4 hours to overnight.
  4. Preheat the grill to medium-high heat (350°F-400°F).
  5. Remove chicken from the marinade and place directly on the grill.
  6. Grill for 4-6 minutes per side, flipping only when the chicken releases easily from the grill.
  7. Remove chicken when its internal temperature reaches 165°F and let it rest for 5 minutes before slicing.
