Instructions
- Fry the bacon in a cold cast iron skillet over medium heat until crispy, then remove and drain on paper towels, leaving the grease in the pan.
- Add olive oil and Brussels sprouts to the pan, seasoning with salt and pepper, and stir to combine.
- Increase heat to medium-high and arrange Brussels sprouts cut-side down in a single layer, searing without moving for 3-4 minutes until browned.
- Chop the bacon while the sprouts brown, then add balsamic vinegar and remaining olive oil, cover, and cook for 2-3 more minutes.
- Return the chopped bacon to the pan and stir to combine before serving.
