Fried Brussels Sprouts

Ingredients

  • 4 slices Bacon
  • 1 lb Brussels sprouts
  • 3 tbsp Olive oil
  • ¾ tsp Sea salt
  • ¼ tsp Black pepper
  • 2 tbsp Balsamic Vinegar (optional)

Instructions

  1. Fry the bacon in a cold cast iron skillet over medium heat until crispy, then remove and drain on paper towels, leaving the grease in the pan.
  2. Add olive oil and Brussels sprouts to the pan, seasoning with salt and pepper, and stir to combine.
  3. Increase heat to medium-high and arrange Brussels sprouts cut-side down in a single layer, searing without moving for 3-4 minutes until browned.
  4. Chop the bacon while the sprouts brown, then add balsamic vinegar and remaining olive oil, cover, and cook for 2-3 more minutes.
  5. Return the chopped bacon to the pan and stir to combine before serving.
