Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Combine all meatball ingredients in a large bowl and knead until fully mixed, being careful not to overmix.
- Form the mixture into 48 small meatballs, about the size of a ping-pong ball, and place them on the prepared baking sheet.
- Bake the meatballs at 425°F for 10 minutes, then reduce the temperature to 350°F and bake for an additional 8 minutes until golden brown.
- While the meatballs are baking, combine all sauce ingredients in a sauté pan, whisk together, and bring to a simmer.
- Add the par-baked meatballs to the simmering sauce, cover partially, and simmer for 8 to 10 minutes until the sauce reduces to a thick glaze.
- Garnish the meatballs with chopped parsley and pistachios before serving.
