Chocolate Dipped Peanut Butter Balls

smooth peanut butter
The coating

candy-making dark chocolate disks

Maldon or Fleur de Sel or other flaky sea salt

Instructions
- Combine vanilla wafers and confectioner’s sugar in a food processor and pulse until blended.
- Add softened butter and pulse until well mixed.
- Add peanut butter gradually, pulsing until smooth, then transfer to a bowl.
- Form the mixture into balls weighing ¼ oz or about ½ teaspoon each.
- Chill the balls in the refrigerator for at least one hour.
- Melt the chocolate in a double boiler until smooth.
- Dip each ball into the melted chocolate, then place in paper wrappers.
- Sprinkle a small amount of flaky sea salt on top of each ball.
- Chill the coated balls in the freezer for 5 minutes to firm up.
- Store in a box and enjoy!
