Chocolate Dipped Peanut Butter Balls

Ingredients

The mixture

  • 2 cups vanilla wafers
  • 1 lb confectioner’s sugar
  • ½ lb unsalted butter, softened
  • 12 oz smooth peanut butter

The coating

  • 1 lb candy-making dark chocolate disks
  • to taste Maldon or Fleur de Sel or other flaky sea salt
  • as needed paper petit fours wrappers

Instructions

  1. Combine vanilla wafers and confectioner’s sugar in a food processor and pulse until blended.
  2. Add softened butter and pulse until well mixed.
  3. Add peanut butter gradually, pulsing until smooth, then transfer to a bowl.
  4. Form the mixture into balls weighing ¼ oz or about ½ teaspoon each.
  5. Chill the balls in the refrigerator for at least one hour.
  6. Melt the chocolate in a double boiler until smooth.
  7. Dip each ball into the melted chocolate, then place in paper wrappers.
  8. Sprinkle a small amount of flaky sea salt on top of each ball.
  9. Chill the coated balls in the freezer for 5 minutes to firm up.
  10. Store in a box and enjoy!
