Ingredients

Salted Bourbon Sugar

  • ½ cup course sugar such as Demerara Sugar or Turbinado Sugar
  • 1 bean vanilla (seeds removed)
  • 2 tablespoons bourbon
  • to taste pinch flaky sea salt

Easy Peanut Butter Cup Fudge

  • cups cold peanut butter cups (chopped)
  • 12 ounces semisweet chocolate (chopped)
  • 5 ounces milk chocolate (chopped)
  • 1 can sweetened condensed milk (14 ounces)
  • ¼ cup heavy whipping cream
  • 2 tablespoons bourbon (optional)
  • 1 teaspoon vanilla
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 250°F and line a baking sheet with parchment paper for the bourbon sugar.
  2. Combine the sugar, vanilla bean, and bourbon on the baking sheet and mix well.
  3. Bake the sugar mixture for 1 hour to 1 hour 30 minutes, tossing twice, until dry and golden.
  4. Let the bourbon sugar cool completely before storing.
  5. Chop the peanut butter cups and freeze them.
  6. Prepare an 8-inch square pan with cooking spray and parchment paper.
  7. In a saucepan, melt the semisweet chocolate, milk chocolate, condensed milk, and cream over low heat until smooth.
  8. Remove from heat and stir in bourbon, vanilla, salt, and peanut butter cups gently.
  9. Spread the fudge mixture into the prepared pan and sprinkle with bourbon sugar.
  10. Refrigerate for about 1 hour until set, then cut into squares.
