Ingredients

The nuts

  • 2 cups raw pecan halves

The coating

  • ½ cup real maple syrup
  • teaspoons ground cinnamon
  • ½ teaspoon fine sea salt
  • teaspoon ground cayenne

Instructions

  1. Combine all ingredients in a sauté pan and toss until the pecans are evenly coated.
  2. Cook on medium heat until the maple syrup comes to a low simmer, stirring occasionally.
  3. Reduce heat to medium-low and continue simmering for about 20-25 minutes, stirring often, until the liquid has evaporated and the sugars have crystallized.
  4. Once the syrup starts to crystallize, cook for 1 more minute, stirring frequently.
  5. Pour the candied pecans onto a flat surface covered with parchment paper and break apart any clumps.
  6. Let the pecans cool to room temperature before serving or storing.
