Ingredients

  • cup coconut flour, sifted
  • 2 teaspoons baking powder
  • ½ cup coconut oil, melted
  • 8 large eggs
  • ½ cup shredded cheese

Instructions

  1. Preheat the oven to 190C/370F and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the coconut flour and baking powder, then set aside.
  3. In a large bowl, whisk together the coconut oil and eggs until smooth and combined.
  4. Gently fold in the dry ingredients and optional cheese until a thick dough forms.
  5. Let the dough sit for 10 minutes to thicken.
  6. Scoop out 12 portions of the dough onto the lined baking sheet and press each into a thick disk.
  7. Bake for 27-30 minutes until golden on top.
  8. Remove from the oven and let sit for 5 minutes before serving.
