Italian Cheeseburger

Ingredients

The burger

  • 2 lbs ground beef
  • to taste salt
  • to taste pepper
  • 6 pieces ciabatta rolls
  • 6 slices smoked gouda cheese
  • 12–18 pieces sun dried tomatoes
  • 1 ½ cups fresh arugula
  • 6 slices prosciutto

Basil Pesto Aioli

  • ½ cup mayonnaise
  • ¾ cup fresh basil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper

Instructions

  1. Heat the grill to medium-high heat.
  2. In a food processor, blend the garlic until minced, then add mayo, basil, lemon juice, salt, and pepper. Blend until smooth and set aside.
  3. Form the ground beef into six 1/3 lb. patties and season with salt and pepper.
  4. Prepare the grill by spraying with cooking spray or rubbing with olive oil.
  5. Grill the patties for 4-5 minutes on each side without pressing them down.
  6. Add a slice of gouda cheese on each burger during the last minute of grilling and cover the grill to melt the cheese.
  7. Toast the ciabatta buns on the grill for 1 minute.
  8. Assemble the burgers with the bottom bun, pesto aioli, arugula, patty, sun dried tomatoes, prosciutto, and top bun.
