Turkey Sandwich with Brie and Cranberry

Ingredients

  • 1 loaf french bread
  • 1 lb thinly sliced turkey meat
  • ½ cup mayo
  • 1 tbsp chopped rosemary
  • 1 small can cranberry sauce
  • 1 5 oz container alouette spreadable brie
  • 1 bunch arugula
  • to taste fresh ground pepper

Instructions

  1. Slice the ends off the baguette and then slice it lengthwise, creating a pocket by removing some of the bread inside.
  2. Combine the rosemary and mayo, then spread it generously on both pieces of bread.
  3. Spread the brie on the bottom piece of bread.
  4. Add the turkey, followed by generous spoonfuls of cranberry sauce on top.
  5. Sprinkle freshly ground pepper over the toppings and layer with arugula.
  6. Place the top half of the baguette on the sandwich and compress it to combine the flavors.
  7. Slice the sandwich into 2-inch serving sizes and store in a Tupperware container, layering tightly.
