Ingredients

The jalapenos

  • 20 small jalapenos

The filling

  • 4 oz softened cream cheese
  • 1 cup shredded cheddar cheese
  • 4 tsp sweet and spicy umami blend
  • ½ tsp ground black pepper
  • tsp salt
  • tbsp minced chives

The batter

  • 1 cup all purpose flour
  • ½ cup corn starch
  • 2 tsp baking powder
  • 2 tsp salt
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup sparkling water
  • 2 tbsp sparkling water (as needed)
  • Neutral oil for frying (avocado or grapeseed oil)

For coating

  • 3 tbsp all purpose flour

Instructions

  1. Prepare the filling by mixing cream cheese, cheddar cheese, chives, and spices in a bowl.
  2. Cut the tops off the jalapenos and hollow them out.
  3. Fill the jalapenos with the cheese mixture using a piping bag.
  4. Freeze the filled jalapenos while preparing the batter.
  5. Coat the stuffed jalapenos in flour and set aside.
  6. Make the batter by whisking together flour, cornstarch, baking powder, salt, pepper, and garlic and onion powders, then add sparkling water until the right consistency is reached.
  7. Heat oil in a pot or pan.
  8. Dip jalapenos in the batter and fry them until golden brown, rotating them halfway through.
  9. Garnish with sea salt and serve immediately.
