BA’s Best Shrimp Cocktail

Ingredients

The shrimp

  • 1 lb shell-on jumbo or large shrimp, deveined
  • ¼ cup Diamond Crystal or 2 Tbsp. plus 2 tsp. Morton kosher salt
  • ¼ cup sugar
  • 2 lemons lemons

The cocktail sauce

  • 1 cup chili sauce (preferably Heinz)
  • ¾ tsp finely grated lemon zest
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp prepared horseradish
  • 2 tsp freshly ground black pepper
  • ¾ tsp hot sauce (preferably Tabasco)

For serving

  • to taste lemon wedges

Instructions

  1. Prepare an ice bath with 8 cups of ice in a large bowl.
  2. In a large saucepan, combine salt, sugar, and water. Squeeze juice from 2 halved lemons into the pot and add the lemon halves. Bring to a boil and dissolve the salt and sugar.
  3. Add the shrimp to the boiling liquid and poach for 3½ minutes.
  4. Add the reserved ice to the saucepan to rapidly chill the shrimp. Let them sit in the ice bath for 10 minutes, then drain and pat dry.
  5. For the cocktail sauce, mix chili sauce, lemon zest, lemon juice, horseradish, black pepper, and hot sauce in a small bowl. Cover and chill until ready to serve.
  6. Serve the chilled shrimp on cracked ice with lemon wedges and the cocktail sauce.
