BA’s Best Shrimp Cocktail

Diamond Crystal or 2 Tbsp. plus 2 tsp. Morton kosher salt

chili sauce (preferably Heinz)

hot sauce (preferably Tabasco)
For serving
Instructions
- Prepare an ice bath with 8 cups of ice in a large bowl.
- In a large saucepan, combine salt, sugar, and water. Squeeze juice from 2 halved lemons into the pot and add the lemon halves. Bring to a boil and dissolve the salt and sugar.
- Add the shrimp to the boiling liquid and poach for 3½ minutes.
- Add the reserved ice to the saucepan to rapidly chill the shrimp. Let them sit in the ice bath for 10 minutes, then drain and pat dry.
- For the cocktail sauce, mix chili sauce, lemon zest, lemon juice, horseradish, black pepper, and hot sauce in a small bowl. Cover and chill until ready to serve.
- Serve the chilled shrimp on cracked ice with lemon wedges and the cocktail sauce.
