Mexican Shrimp Cocktail

Ingredients

The shrimp

  • 12 oz Medium shrimp (peeled and deveined)
  • 2 tbsp Lime juice (optional, only for marinated shrimp)
  • to taste Sea salt
  • to taste Black pepper

The cocktail sauce

  • cup Red onion (diced)
  • cup Fresh cilantro (chopped)
  • 1 medium Roma tomato (diced)
  • ½ medium Jalapeno (seeded and diced)
  • 6 tbsp Ketchup
  • 2 tbsp Mexican hot sauce (Tabasco, Valentina, or Tapatio)
  • 1 tbsp Lime juice
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • ½ large Avocado (cubed)

Instructions

  1. To poach the shrimp, bring a medium pot of salted water to a boil, then turn off the heat and add the shrimp. Let it sit for about 3 minutes until cooked through, then transfer to ice water.
  2. To marinate the shrimp, place it in a bowl with lime juice, sea salt, and black pepper. Cover and refrigerate for at least 30 minutes.
  3. In a large bowl, stir together the red onion, cilantro, tomato, jalapeno, ketchup, hot sauce, lime juice, salt, and pepper.
  4. Gently fold in the cooked or marinated shrimp and avocado. Serve with chips or veggies.
