Instructions
- To poach the shrimp, bring a medium pot of salted water to a boil, then turn off the heat and add the shrimp. Let it sit for about 3 minutes until cooked through, then transfer to ice water.
- To marinate the shrimp, place it in a bowl with lime juice, sea salt, and black pepper. Cover and refrigerate for at least 30 minutes.
- In a large bowl, stir together the red onion, cilantro, tomato, jalapeno, ketchup, hot sauce, lime juice, salt, and pepper.
- Gently fold in the cooked or marinated shrimp and avocado. Serve with chips or veggies.
