Ingredients

The base

  • 1 tablespoon olive oil
  • 1 cup quinoa
  • cups broth

Optional aromatics

  • ½ cup diced onion
  • ¼ cup diced celery
  • ¼ cup diced carrots

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. If using aromatics, add onion, celery, and carrots, cooking for 6 to 8 minutes until tender.
  3. While the aromatics are cooking, rinse quinoa in a fine mesh strainer for 3 to 5 minutes until the water runs clear.
  4. If the saucepan is dry, add another tablespoon of oil and toast the quinoa for 2 to 3 minutes.
  5. Add broth to the pan, bring to a simmer, then reduce heat to low.
  6. Cover and cook for 30 to 35 minutes until the liquid is absorbed.
  7. Turn off the heat, season with salt and pepper, and stir in fresh herbs if desired.
  8. Let sit covered for another 5 minutes, then fluff and serve.
