Ginger Garlic Grilled Salmon

Ingredients

The salmon

  • 2 fillets fresh salmon, with skin

The marinade

  • ¼ cup extra-virgin olive oil
  • 1 tbsp unseasoned rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ½ tsp chili pepper flakes
  • ½ tsp salt
  • ¼ tsp ground white pepper
  • ¼ tsp Chinese 5 spice

To garnish

  • to taste chopped fresh cilantro

Instructions

  1. Combine all marinade ingredients in a small container and mix well.
  2. Place salmon skin side down in a baking dish and pour marinade over it, avoiding ginger and garlic under the fillets.
  3. Refrigerate uncovered for about an hour or covered for up to 4 hours.
  4. Preheat the oven to broil and place a rack in the top position.
  5. Heat a heavy-bottomed skillet over high heat without adding fat.
  6. Once hot, place the salmon fillets skin side down in the pan and cook for about 3 minutes until the skin is crispy.
  7. Spoon some marinade over each fillet and place the pan under the broiler for 5 to 7 minutes until golden.
  8. Remove from the oven, add more marinade over the fillets, garnish with cilantro, and serve immediately.
