Tender, Caramelized Air Fryer Butternut Squash Cubes

Ingredients

The squash

  • 1 medium butternut squash (about 2 lbs)

The coating

  • 1 tbsp olive oil
  • 1 tbsp maple syrup (omit for Whole30)

The seasoning

  • 1 tsp sea salt
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp ground cinnamon

Instructions

  1. Mix the seasoning ingredients in a small bowl.
  2. Cut the ends off the butternut squash and peel the skin.
  3. Slice the squash in half lengthwise and remove the seeds.
  4. Cut the squash into 1-inch cubes and place them in a bowl.
  5. Preheat the air fryer to 400°F for 5 minutes.
  6. Drizzle olive oil and maple syrup over the squash cubes and toss to coat.
  7. Sprinkle the seasoning mix over the cubes and toss to mix.
  8. Spread the squash cubes in a single layer in the air fryer basket.
  9. Air fry for 25-30 minutes, stirring after 15 minutes, until tender and caramelized.
