Healthy Baked Oatmeal with Blackberries & Coconut

Instructions
- 1. Preheat the oven to 375°F and prepare an 8-inch square baking dish.
- 2. Mix the dry ingredients (oats, coconut, sugar, baking powder, cinnamon, and salt) in a medium bowl.
- 3. In another bowl, whisk together the wet ingredients (maple syrup, coconut milk, water, egg, half of the melted butter, and vanilla).
- 4. Layer banana slices at the bottom of the baking dish and top with two-thirds of the berries.
- 5. Cover the fruit with the dry oat mixture and drizzle the wet ingredients over the oats.
- 6. Scatter the remaining berries on top and optionally sprinkle with extra coconut flakes and raw sugar.
- 7. Bake for 45 minutes until golden and let cool for a few minutes before serving.
