Healthy Baked Oatmeal with Blackberries & Coconut

Ingredients

The base

  • 2 cups rolled oats
  • ½ cup unsweetened shredded coconut
  • 1 teaspoon aluminum-free baking powder
  • 1 ½ teaspoons ground cinnamon
  • scant ½ teaspoon fine-grain sea salt

The wet ingredients

  • 1 can light coconut milk (14 oz)
  • cup water
  • cup pure maple syrup (or raw sugar)
  • 1 large egg
  • 3 tablespoons unsalted butter, melted and cooled slightly (or melted coconut oil)
  • 2 teaspoons pure vanilla extract

The fruit

  • 2 ripe bananas, cut into ½-inch pieces
  • 1 ½ cups blackberries or other berries (6.5 oz)

Instructions

  1. 1. Preheat the oven to 375°F and prepare an 8-inch square baking dish.
  2. 2. Mix the dry ingredients (oats, coconut, sugar, baking powder, cinnamon, and salt) in a medium bowl.
  3. 3. In another bowl, whisk together the wet ingredients (maple syrup, coconut milk, water, egg, half of the melted butter, and vanilla).
  4. 4. Layer banana slices at the bottom of the baking dish and top with two-thirds of the berries.
  5. 5. Cover the fruit with the dry oat mixture and drizzle the wet ingredients over the oats.
  6. 6. Scatter the remaining berries on top and optionally sprinkle with extra coconut flakes and raw sugar.
  7. 7. Bake for 45 minutes until golden and let cool for a few minutes before serving.
