Asian Crab and Avocado Cucumber Salad

Ingredients

  • 2 cucumber cucumber
  • 6.5 oz wild caught lump crab meat
  • 2 tbsp chopped cilantro
  • 1 tsp dried red pepper flakes
  • ½ tsp minced garlic
  • 2-3 tsp sesame oil
  • 2 tsp rice vinegar
  • splash lime
  • ½ to 1 whole avocado
  • 1 large plum
  • to taste sesame seeds
  • to taste sea salt
  • to taste black pepper

Instructions

  1. Wash and dry the vegetables and fruit.
  2. Spiralize the cucumber or slice it julienne style, peeling if desired.
  3. Pat dry the cucumber spirals to remove excess water.
  4. In a bowl, mix the spiralized cucumber with 1 teaspoon or more of sesame oil and rice vinegar.
  5. In another bowl, combine the crab meat, cilantro, red pepper flakes, garlic, vinegar, and 1 teaspoon of sesame oil, then mix well.
  6. Slice the plum and avocado.
  7. Arrange all ingredients in a large salad bowl or two small bowls.
  8. Season with salt, pepper, and a splash of lime.
  9. Garnish with sesame seeds.
