Ingredients

The pasta salad

  • 12 oz farfalle pasta

  • 1 cup cooked or steamed peas
  • ¼ cup cherry tomatoes
  • cup feta cheese
  • ¼ cup chopped onions
  • ¼ cup sliced black olives

The dressing

  • ½ cup olive oil
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons red or white vinegar
  • 1 teaspoon sweetener or sugar
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon crushed red pepper flakes
  • to taste salt and pepper

Instructions

  1. Cook the farfalle according to package instructions.
  2. Rinse the cooked pasta in cold water and pat dry.
  3. In a large bowl, combine the farfalle with the chopped vegetables, feta, olives, and Italian dressing.
  4. Taste and adjust the seasoning if necessary.
  5. Chill the salad for at least 1 hour, preferably 2-3 hours.
