Instructions
- Cook the tortellini according to package instructions, usually about 5-6 minutes, then drain and set aside.
- Rinse the tortellini under cold water and toss with a small drizzle of olive oil.
- In a small bowl, whisk together the balsamic vinegar, lemon juice, olive oil, minced garlic, honey, Italian seasoning, salt, and pepper.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, basil, and mozzarella cheese.
- Pour the dressing over the salad and mix gently.
- Garnish with extra basil and serve.
