Tortellini Caprese Salad

Ingredients

The salad

  • 10 oz cheese tortellini
  • 2 cups cherry tomatoes
  • 8 oz mozzarella cheese pearls
  • ¼ cup fresh basil

The vinaigrette

  • 2 tbsp white balsamic vinegar
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic
  • ½ tsp Italian seasoning
  • tsp salt
  • tsp black pepper
  • 1 tsp honey or maple syrup

Instructions

  1. Cook the tortellini according to package instructions, usually about 5-6 minutes, then drain and set aside.
  2. Rinse the tortellini under cold water and toss with a small drizzle of olive oil.
  3. In a small bowl, whisk together the balsamic vinegar, lemon juice, olive oil, minced garlic, honey, Italian seasoning, salt, and pepper.
  4. In a large bowl, combine the cooked tortellini, cherry tomatoes, basil, and mozzarella cheese.
  5. Pour the dressing over the salad and mix gently.
  6. Garnish with extra basil and serve.
