Ingredients

Brine

  • 1 gallon water
  • ½ cup granulated sugar
  • ½ cup salt
  • 2 bay leaves
  • 1 lemon, sliced
  • 2 sprigs fresh thyme
  • 1 tablespoon fresh sage leaves

Chicken Wings

  • 3 pounds chicken wings, with tips and wings separated
  • 2 tablespoons olive oil
  • 1 tablespoon homemade dry rub or store bought
  • to taste barbecue sauce for brushing

Instructions

  1. Combine water, sugar, salt, bay leaves, lemon, thyme, garlic, and sage in a saucepan and heat until sugar dissolves, then cool completely.
  2. Place chicken wings in a container, cover with brine, and refrigerate overnight, ensuring they are submerged.
  3. Remove chicken from brine and rinse to remove excess salt and spices.
  4. Rub chicken with olive oil and coat with dry rub on all sides.
  5. Preheat smoker to 200-225 degrees Fahrenheit.
  6. Place chicken on the smoker grate and cover.
  7. After 30 minutes, flip the wings and replace the lid.
  8. At the 1-hour mark, flip the wings again.
  9. After 20 minutes, brush wings with barbecue sauce and cover for another 10 minutes.
  10. Continue cooking until wings reach an internal temperature of 165 degrees Fahrenheit.
