Instructions
- Combine water, sugar, salt, bay leaves, lemon, thyme, garlic, and sage in a saucepan and heat until sugar dissolves, then cool completely.
- Place chicken wings in a container, cover with brine, and refrigerate overnight, ensuring they are submerged.
- Remove chicken from brine and rinse to remove excess salt and spices.
- Rub chicken with olive oil and coat with dry rub on all sides.
- Preheat smoker to 200-225 degrees Fahrenheit.
- Place chicken on the smoker grate and cover.
- After 30 minutes, flip the wings and replace the lid.
- At the 1-hour mark, flip the wings again.
- After 20 minutes, brush wings with barbecue sauce and cover for another 10 minutes.
- Continue cooking until wings reach an internal temperature of 165 degrees Fahrenheit.
