Coconut Lime Salmon

Instructions
- Remove salmon from the refrigerator to bring it closer to room temperature.
- Preheat the oven to 400ºF (205ºC).
- In a shallow dish, mix lime juice, melted coconut oil, coconut milk, honey, and sea salt until well combined.
- Place salmon fillets in the marinade for 30 minutes, flipping halfway through.
- Line a baking sheet with parchment paper and place the marinated salmon on it.
- Top the salmon with flaked coconut.
- Bake for 12-15 minutes, until the salmon flakes easily with a fork.
- After cooking, add lime zest and flaky sea salt on top, and garnish with lime slices.
- Serve with lime wedges.
