Coconut Lime Salmon

Ingredients

The salmon

  • 4 fillets salmon

The marinade

  • 2 limes juice
  • 2 Tbsp coconut oil
  • 2 Tbsp coconut milk
  • 1 Tbsp honey
  • 1 ½ tsp sea salt

The topping

  • ½ cup unsweetened flaked coconut
  • 2 limes zest
  • to taste flaky sea salt
  • as needed lime wedges
  • as needed lime slices

Instructions

  1. Remove salmon from the refrigerator to bring it closer to room temperature.
  2. Preheat the oven to 400ºF (205ºC).
  3. In a shallow dish, mix lime juice, melted coconut oil, coconut milk, honey, and sea salt until well combined.
  4. Place salmon fillets in the marinade for 30 minutes, flipping halfway through.
  5. Line a baking sheet with parchment paper and place the marinated salmon on it.
  6. Top the salmon with flaked coconut.
  7. Bake for 12-15 minutes, until the salmon flakes easily with a fork.
  8. After cooking, add lime zest and flaky sea salt on top, and garnish with lime slices.
  9. Serve with lime wedges.
