Shrimp Couscous Foil Packs with Mango Avocado Salsa

Instructions
- Preheat a gas grill to medium-high heat (about 450 degrees).
- Cut 8 sheets of heavy-duty aluminum foil (14 by 12 inches each) and layer two sheets per packet.
- Spray the center of the top 4 pieces of foil with cooking spray and layer spinach over each packet.
- In a bowl, combine couscous and chicken broth, season with salt, and divide among the packets over the spinach.
- Toss shrimp with lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper, then divide among the packets over the couscous.
- Wrap the foil to seal and grill sealed side up for about 12-14 minutes until cooked through.
- Prepare the salsa by mixing mango, avocado, tomato, red onion, remaining cilantro, lime juice, olive oil, and season with salt and pepper.
- Remove packets from the grill, open carefully, and toss contents if desired. Serve warm with the salsa.
