Dark Chocolate Covered Kiwi Pops

Ingredients

  • 3 medium to large kiwis
  • 6 ounces dark chocolate
  • 1 tablespoon coconut oil
  • as needed pieces popsicle sticks

Instructions

  1. Line a baking pan with parchment paper.
  2. Trim and peel the kiwis, then slice them into ½ inch rounds.
  3. Insert a popsicle stick into each kiwi slice and place them on the baking sheet.
  4. Freeze the kiwi slices for at least four hours until solid.
  5. Melt the dark chocolate and stir in the coconut oil until combined.
  6. Dip each frozen kiwi slice into the melted chocolate and let the excess drip off.
  7. Enjoy immediately or return to the freezer until ready to serve.
