Ingredients

Cauliflower Wings

  • 1 medium head cauliflower
  • ¾ cup all-purpose gluten free flour
  • ¾ cup unsweetened almond milk
  • 1 tablespoon lemon pepper seasoning
  • 1 cup crispy gluten free breadcrumbs, seasoned with salt & pepper
  • 1 teaspoon lemon pepper seasoning (for breadcrumbs)
  • to taste chopped parsley and freshly grated lemon zest (for garnish)

Lemon Pepper Glaze

  • 8 ½ tablespoons lemon juice
  • 4 ½ tablespoons maple syrup or agave nectar
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon freshly grated lemon zest
  • 1 teaspoon cornstarch
  • 1 teaspoon water (for cornstarch slurry)

Instructions

  1. Preheat the oven to 450°F (230°C) and prepare a baking sheet.
  2. Remove florets from the cauliflower and chop into wing-sized pieces.
  3. In a bowl, whisk together gluten-free flour, almond milk, and lemon pepper seasoning to make the batter.
  4. Place breadcrumbs in a separate bowl.
  5. Coat the cauliflower pieces in the batter, then transfer them to the breadcrumbs to coat completely.
  6. Arrange the coated wings on the baking sheet with space between them.
  7. Bake the wings for 22 minutes.
  8. While baking, prepare the glaze by heating and whisking together the glaze ingredients in a pan until thickened.
  9. Remove the wings from the oven, toss them in the glaze, and return to the baking sheet.
  10. Bake for an additional 5 minutes.
  11. Garnish with parsley and lemon zest before serving.
