Homemade Quince Paste

Ingredients

  • 6 medium quinces
  • 2 lbs water
  • 2 T. freshly squeezed lemon juice
  • 3 cups sugar

Instructions

  1. Wash the quinces and remove any stickers, fuzz, or leaves.
  2. Cut around the core to remove the flesh and discard the core, then cut the flesh into large chunks.
  3. Place the quince pieces in a saucepan and cover with water and lemon juice.
  4. Gently simmer until the pieces are very tender, about 1½ hours.
  5. Drain the quince pieces and pass them through a food mill.
  6. Transfer the purée to a large non-stick sauté pan, add sugar, and cook over low heat while stirring frequently for about an hour.
  7. Spread the quince paste onto a lined sheet pan to about ½ inch thick and smooth it out.
  8. Let the paste cool completely.
  9. Once cool, cut the parchment into squares and layer the quince paste in between parchment paper for storage.
  10. Slice into triangles or small squares when ready to serve.
