Homemade Quince Paste

Instructions
- Wash the quinces and remove any stickers, fuzz, or leaves.
- Cut around the core to remove the flesh and discard the core, then cut the flesh into large chunks.
- Place the quince pieces in a saucepan and cover with water and lemon juice.
- Gently simmer until the pieces are very tender, about 1½ hours.
- Drain the quince pieces and pass them through a food mill.
- Transfer the purée to a large non-stick sauté pan, add sugar, and cook over low heat while stirring frequently for about an hour.
- Spread the quince paste onto a lined sheet pan to about ½ inch thick and smooth it out.
- Let the paste cool completely.
- Once cool, cut the parchment into squares and layer the quince paste in between parchment paper for storage.
- Slice into triangles or small squares when ready to serve.
