Ingredients

  • ½ unit red onion, chopped
  • 2 cloves garlic, chopped
  • 2 unit ripe mangoes, peeled and diced
  • 2 Tablespoons olive oil
  • 15 oz can of tomato sauce
  • ½ cup brown sugar
  • 2 Tablespoons brown sugar
  • ¼ cup apple cider vinegar
  • 1 Tablespoon chili paste
  • to taste salt and pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add red onion, garlic, and mango to the skillet and sauté until the mango is slightly browned and the onions are translucent, about 4-5 minutes.
  3. Stir in the tomato sauce, brown sugar, apple cider vinegar, chili paste, salt, and pepper.
  4. Bring the mixture to a soft boil.
  5. Transfer all ingredients to a blender and blend until smooth.
