Instructions
- Preheat the grill to 400°F.
- Butterfly thick chicken breasts and pound them to about ¼ inch thick.
- In a Ziploc bag, combine olive oil, lime juice, lime zest, garlic, cilantro, salt, and pepper with the chicken.
- Marinate the chicken for 20-25 minutes.
- Prepare the salsa by dicing the grilled pineapple, shallots, jalapeno, and red bell pepper, and mixing them in a bowl with corn and lime juice.
- Place a sheet of foil on the grill and add the marinated chicken.
- Grill the chicken for about 3 minutes on each side until cooked through.
- Serve the grilled chicken topped with pineapple jalapeno salsa.
