Ingredients

The greens

  • ¾ lb collard greens

The aromatics

  • 2 cups onions, sliced
  • 3 cloves garlic, minced

The other ingredients

  • 1 tbsp extra virgin olive oil
  • 2 tbsp raisins
  • cup water

Instructions

  1. Prepare the collard greens by removing the stems and finely chopping them.
  2. Stack the leaves, roll them, and slice into ribbons.
  3. Heat olive oil in a large non-stick sauté pan over medium heat.
  4. Add sliced onions and sauté for about 15 minutes until golden brown.
  5. Add chopped collard stems and garlic, sauté for another 5 minutes until softened.
  6. Stir in the leafy greens and water, season with salt and pepper, and cook for about 5 minutes until wilted.
  7. Add raisins and cook for an additional 2-3 minutes to warm them up.
  8. Adjust seasonings as needed and serve.
