Gluten Free Cocoa Brownies

Ingredients

  • 10 tablespoon unsalted butter
  • cup sugar
  • ¾ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ½ teaspoon pure vanilla extract
  • 2 large cold eggs
  • ½ cup Gluten Free Flour blend
  • cup chopped pecans or walnuts (or nut free)
  • ½ cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips
  • ½ cup white chocolate chips

Instructions

  1. Preheat the oven to 325°F and prepare a 9" square baking pan with parchment or foil.
  2. Melt the butter, sugar, cocoa, and salt in a heatproof bowl over simmering water, stirring until smooth.
  3. Remove from heat and let cool slightly before adding vanilla.
  4. Add eggs one at a time, stirring vigorously after each addition until the batter is thick and shiny.
  5. Stir in the flour until just combined, then beat vigorously for 40 strokes.
  6. Fold in the nuts and chocolate chips, then spread the batter in the prepared pan.
  7. Bake for 25-28 minutes until a toothpick comes out slightly moist.
  8. Let cool completely on a wire rack, then lift out of the pan and cut into squares.
