Ingredients

The crust

  • 2 cups brown rice crispy cereal
  • 2 Tbsp unsweetened cocoa powder
  • 2 Tbsp white sugar (or equivalent granulated sweetener)
  • ¼ tsp salt
  • ½ cup natural almond butter
  • 2 Tbsp natural almond butter

The filling

  • 1 ½ cups natural peanut butter
  • ½ cup powdered peanuts
  • cup maple syrup
  • 2 Tbsp powdered sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Line a 9-inch pie pan with cling film, leaving excess to hang over the edges.
  2. For the crust, stir together the rice cereal, cocoa powder, sugar, and salt in a large bowl.
  3. Add the almond butter and mix until incorporated.
  4. Press the mixture evenly into the prepared pie pan, ensuring it covers the bottom and sides.
  5. Refrigerate the crust for at least 2 hours to firm up.
  6. For the filling, mix together the peanut butter, powdered peanuts, maple syrup, powdered sugar, vanilla extract, and salt until smooth.
  7. Pour the filling into the firm crust and return to the fridge for 2-4 hours until set.
  8. Use the cling film to lift the pie out of the pan and slice into pieces.
