Blueberry Granita

Ingredients

  • 4 cups blueberries
  • 6 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 cup water

Instructions

  1. Combine blueberries, sugar, lemon juice, and water in a small saucepan.
  2. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  3. Remove from heat and allow to cool.
  4. Pour the mixture into a blender and blend until smooth.
  5. Strain the mixture through a fine mesh sieve into a bowl, discarding solids.
  6. Pour the strained mixture into a shallow baking dish.
  7. Freeze for 45 minutes.
  8. Scrape frozen sections from the edges with a fork and stir the center.
  9. Continue to scrape every 45 minutes until completely frozen.
  10. Scrape again before serving and scoop into dishes.
