Ingredients

The Salad

  • 1 medium head lettuce
  • cups cherry tomatoes
  • 1 small cucumber
  • ½ cup chopped kalamata olives
  • ¼ cup diced red onion
  • 1 cup chopped artichoke hearts
  • ¼ cup crumbled feta cheese
  • 2 tsp fresh oregano

The Dressing

  • 3 tbsp red wine vinegar
  • 2 tbsp olive oil
  • tsp garlic powder
  • tsp black pepper

Instructions

  1. Chop each of the salad ingredients on a large cutting board and place them in a large bowl.
  2. In a small bowl or jar, mix the dressing ingredients together.
  3. Pour half of the dressing over the salad and mix. Taste and add more dressing if needed.
  4. Serve immediately or store the lettuce separately from the other ingredients if making ahead.
