Homemade pita chips
Instructions
- Make the Greek salad dressing by whisking together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and black pepper in a small bowl or jar.
- In a large bowl, combine the romaine lettuce, cucumber, tomatoes, red pepper, artichokes, red onion, kalamata olives, chickpeas, and feta cheese.
- If using, break up the homemade pita chips and add them to the salad.
- Drizzle the salad with the Greek dressing and toss until all ingredients are well coated.
- Serve immediately for best results.
