Mango Breakfast Chia Pudding

Ingredients

The pudding

  • 5 tablespoons chia seeds
  • ½ cup mango puree
  • ¾ cup almond or oat milk
  • a pinch of good salt

Toppings (optional)

  • to taste quinoa or brown rice crispies
  • to taste bee pollen
  • to taste shichimi togarashi or cayenne
  • to taste toasted almonds
  • to taste banana chips

Instructions

  1. Combine the chia seeds with the mango puree and stir well.
  2. Add the almond milk and stir again.
  3. Allow to sit for 15 - 30 minutes, stirring occasionally, until the chia seeds bloom and soften.
  4. Alternatively, prepare this the night before for an overnight breakfast.
  5. Just before serving, top with your chosen toppings.
