Basic Butter Cookie

Ingredients

  • 1 stick unsalted butter (small cubed)
  • ½ cup caster sugar
  • 1 medium egg (beaten)
  • 2 cups cake flour
  • ½ cup almond flour
  • ½ tsp ground vanilla
  • a pinch of salt

Instructions

  1. 1. Combine all ingredients in a food processor and pulse until crumbly.
  2. 2. Shape the dough into a long cylinder and wrap in cling wrap.
  3. 3. Refrigerate the dough for at least 1 hour, preferably overnight.
  4. 4. Preheat the oven to 374°F (190°C).
  5. 5. Remove the cling wrap and roll the dough in granulated sugar.
  6. 6. Slice the dough into 0.2 inch thick pieces.
  7. 7. Lay the slices on a silicone mat on a baking tray.
  8. 8. Bake in the oven at 356°F (180°C) for about 18 minutes.
  9. 9. Cool the cookies on a cooling rack.
