Grilled Asparagus

Ingredients

The asparagus

  • 12–16 ounces asparagus
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cloves garlic
  • 1 lemon zest and juice

Optional garnish

  • to taste lemon wedges
  • to taste torn herbs
  • to taste Aleppo chili flakes

Preserved Lemon Aioli (optional)

  • ½ cup mayo (or vegan mayo)
  • 1 tablespoon preserved lemon
  • 1 clove garlic
  • 1–2 tablespoons flat-leaf parsley (or basil, or dill)
  • 1–2 teaspoons water

Instructions

  1. Preheat the grill to medium-high heat.
  2. Trim the tough ends off the asparagus and place them in a bowl.
  3. Add olive oil, salt, pepper, garlic, and lemon zest to the asparagus and toss well.
  4. Prepare the Preserved Lemon Aioli by mixing mayo, preserved lemon, garlic, herbs, and water until smooth.
  5. Once the grill is hot, place the asparagus on the grill across the grates.
  6. Grill for 1-2 minutes, then turn and grill for another 1-2 minutes until bright green.
  7. Test for doneness; they should be tender-crisp with a little char.
  8. Remove from the grill, squeeze with lemon juice, and toss again.
  9. Serve immediately, optionally with the Preserved Lemon Aioli.
