Instructions
- Preheat the oven to 425°F (218°C).
- Cut the bok choy into fourths or eighths lengthwise.
- Arrange the bok choy cut side down on a baking sheet, drizzle with avocado oil, and sprinkle with half of the salt and pepper.
- Flip the bok choy cut side up and spread the minced garlic over it.
- Roast in the oven for 10 minutes, then rotate the pan and roast for another 10 minutes until lightly charred.
