Orange Salmon With Coriander

coriander seeds

Instructions
- Coarsely crush 3 Tbsp. coriander seeds and finely crush the remaining 3 Tbsp.
- Slice one half of the orange into rounds and squeeze juice from the other half.
- Dry the salmon fillets and season with kosher salt, then coat one side in coarsely crushed coriander.
- Heat olive oil in a skillet and cook the salmon, coriander side down, until golden brown, then flip and cook until opaque.
- Remove salmon and sauté shallots in the same skillet, adding finely crushed coriander and lemon juice.
- Stir in butter, reserved orange juice, and water, cooking until the sauce thickens.
- Serve salmon topped with the sauce and orange slices, garnished with cilantro.
