Orange Salmon With Coriander

Ingredients

The salmon

  • 4 6-oz. skinless salmon fillets
  • 2 Tbsp. extra-virgin olive oil
  • Kosher salt

The sauce

  • 6 Tbsp. coriander seeds
  • 2 medium shallots
  • ¼ cup fresh lemon juice
  • 2 Tbsp. unsalted butter
  • cup water

The garnish

  • 1 large orange
  • Cilantro leaves with tender stems

Instructions

  1. Coarsely crush 3 Tbsp. coriander seeds and finely crush the remaining 3 Tbsp.
  2. Slice one half of the orange into rounds and squeeze juice from the other half.
  3. Dry the salmon fillets and season with kosher salt, then coat one side in coarsely crushed coriander.
  4. Heat olive oil in a skillet and cook the salmon, coriander side down, until golden brown, then flip and cook until opaque.
  5. Remove salmon and sauté shallots in the same skillet, adding finely crushed coriander and lemon juice.
  6. Stir in butter, reserved orange juice, and water, cooking until the sauce thickens.
  7. Serve salmon topped with the sauce and orange slices, garnished with cilantro.
