Ingredients

The kale

  • 1 pound kale

The sauté

  • 2 tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • ½ medium onion, sliced
  • ½ bell pepper
  • ½ teaspoon thyme
  • ½-1 teaspoon creole seasoning
  • to taste salt
  • to taste pepper
  • ½ cup sliced almonds

Instructions

  1. Remove the kale leaves from their stems, coarsely chop them, rinse, and set aside.
  2. Heat olive oil in a large sauté pan over medium heat.
  3. Add garlic and sauté until fragrant, about 1 minute.
  4. Add onions, bell pepper, thyme, and creole seasoning; sauté for 2-3 minutes until onions are translucent.
  5. Add kale in handfuls, stirring after each addition until all kale is added.
  6. Stir in salt and pepper, and cook until kale is wilted and tender, about 5 minutes.
  7. Remove from heat, top with sliced almonds, and serve.
