Instructions
- Remove the kale leaves from their stems, coarsely chop them, rinse, and set aside.
- Heat olive oil in a large sauté pan over medium heat.
- Add garlic and sauté until fragrant, about 1 minute.
- Add onions, bell pepper, thyme, and creole seasoning; sauté for 2-3 minutes until onions are translucent.
- Add kale in handfuls, stirring after each addition until all kale is added.
- Stir in salt and pepper, and cook until kale is wilted and tender, about 5 minutes.
- Remove from heat, top with sliced almonds, and serve.
