Potato Croutons

Ingredients

  • scant 1 tablespoon extra virgin olive oil
  • 1 ½ cups potatoes, 1/3-inch dice
  • pinch of none salt
  • 1 clove garlic, minced (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add potatoes and toss to coat with oil, then sprinkle with salt.
  3. Cover the skillet and cook potatoes for about three minutes until just cooked through.
  4. Remove the lid and toss the potatoes, increasing the heat to medium-high.
  5. Stir every minute until the potatoes are golden and crispy.
  6. If desired, add minced garlic halfway through the browning process.
  7. Season with more salt to taste and let cool slightly before using.
