Potato Croutons

Instructions
- Heat olive oil in a skillet over medium heat.
- Add potatoes and toss to coat with oil, then sprinkle with salt.
- Cover the skillet and cook potatoes for about three minutes until just cooked through.
- Remove the lid and toss the potatoes, increasing the heat to medium-high.
- Stir every minute until the potatoes are golden and crispy.
- If desired, add minced garlic halfway through the browning process.
- Season with more salt to taste and let cool slightly before using.
